Ground Beef and Potatoes
Last night was one of those evenings, when everybody was hungry and I was tired. I had to come up with something fast and filling. And there was no time to think and decide on a restaurant from GrubHub, which I always appreciate, because it means that I don’t have to cook. And those evenings are no doubt my favorite.
So with GrubHub out of question, I had to wing it and do it quickly. Everybody in my family loves meat and potatoes, so this is what I made – a kind of throw everything together concoction that turned out pretty good. It was done in about 30 minutes, so no long standing around the pots. I had fresh meat from this morning’s Instacart delivery and I always have potatoes at home, which both are main ingredients for this meal.
Because both meat and potatoes are fried, this meal wouldn’t be found on Nutrisystem website, but as I learned there a while ago, sometimes it’s OK to eat just about anything as long as you watch your portions, which is what I did.
So here it is – the meal anybody can throw together in a hurry and still treat the family to homemade goodness:
Ingredients:
- 1 pound of ground beef
- 5-6 medium to large potatoes
- ½ of sweet onion
- 5 button mushrooms
- Kernels from 1 corn
- Olive oil
- Seasoning or salt and pepper
You will need to have at least 2 frying pans for this meal. 3 would be even faster, but really not necessary.
I cooked meat and onions on a smaller pan and reserved the bigger one for potatoes.
Turn the heat to medium, pour some olive oil, put ground beef and chopped onions in the pan, season everything, and cook stirring frequently.
It takes about 10-15 minutes to cook the meat thoroughly.
Next, take the bigger pan, pour some oil, and slice peeled potatoes there. Add some potato seasoning or simple salt and pepper and cook until browned flipping often.
While the potatoes are getting ready, take cooked meat and onions out of the pan and put into a small bowl.
Slice mushrooms, cut corn kernels, and put both of them onto the same pan that the meat just came from. Cook thoroughly while stirring constantly.
Last but not least, add the meat and corn with mushrooms into the pan with potatoes and give everything a good stir. Voila, ready to eat! It goes great with sour cream or kefir.
See, it was pretty painless and fast, which is my favorite kind of cooking! I made so much of this that we had a nice lunch next day too. Enjoy!
