Ground Beef and Fried Rice
My goal for cooking is to always find something easy and fast. Sure, healthy too because I want my two kids to find balance in their diet early on, but still easy and fast. Cooking and baking are not my hobbies; I do it because I have to, and so I never really experiment in the kitchen. I let Grub Hub do all the experimenting on the nights we order deliveries, which thankfully is at least once a week.
Grub Hub is very much beloved by me, because that means I don’t have to worry about not only dinner, but lunch next day too. And show me a busy mom who wouldn’t like that!
Tonight though I had fresh ground beef, delivered to me by Instacart just this morning, and no time to worry about Grub Hub deliveries in advance. So I had to come up with a satisfying meal that wouldn’t take more than 30 minutes. And beef with rice Chinese style was the first thing that came to mind.
This meal might not be approved by Nutrisystem and diets like that, but it’s completely fine from time to time and very filling. Two growing kids and a husband always need some serious filling!
So without further ado, let’s take a look at this quick beauty:
- 1-2 pounds of ground beef
- ½ of sweet onion
- 4 cloves of garlic
- 4-5 white button mushrooms
- 1 bag of small carrots or 2 medium carrots
- 1 red paprika
- Beef seasoning or salt and pepper
- 1 cup of white jasmine rice
- 3 organic eggs
- 1 tablespoon of soy sauce
- Olive oil
- 1 teaspoon of coconut oil
- 1 green onion
You will need two pans for faster cooking and a pot for rice. I started with rice. Put one cup of rinsed rice in a pot and add salt and 1 ¾ cups of cold water. Turn the heat on high and reduce it to simmer as soon as the water starts boiling. When it starts boiling, add coconut oil for flavor, stir rice, and close the lid. Do not stir the rice again until the water is almost completely evaporated. Then turn the heat off, close the lid, and let rest until you’re ready to serve.
While rice is cooking, you can start on the meat.
Place beef, a bit of olive oil, minced garlic, chopped onion, and cut up mushrooms with paprika in a heated sauté pan.
Add your favorite seasoning and don’t forget to stir the mix frequently.
It should get cooked in about 10 minutes. During this time crack all three eggs in a bowl and whisk them with fork.
Pour the eggs in a separate smaller pan with some olive oil and scramble until fully cooked.
Turn off the heat when they are done.
When the meat and veggies are fully cooked, put rice and eggs in the same pan and stir on low heat until everything is combined, about two minutes.
Pour soy sauce while stirring and at the very end garnish with green onions. Enjoy right away or next day and stay healthy!
